Coconut Flour Muffins
1.5 cups Couxcoux Coconut flour
1/2 tsp salt
1/2 tsp baking soda
1/2 cup organic coconut oil
6 organic eggs
I know this sounds like a rotten recipe with too many eggs …. but TRY!!! You’ll be astounded!!!
Preheat oven to 350F
Mix together dry ingredients in one bowl, whisk eggs and oil in a different bowl.
Fold wet mixture into dry ingredients. Stir only a little.
Batter will be thin, so pour into muffin tins, filling about half way.
For mini muffins bake 10 to 12 mins.
For regular size muffins 17 to 20 mins.
For Coconut Shell Bowls/containers 25 to 27 mins depending on amount of batter.
You can add 1/8 cup to 1/4 cup of unrefined sugar or honey (or 1 tbsp …. maybe 2 tbsps stevia, truvia, erythriol) to this recipe but …. I prefer it without sugar slathered in butter!!
You CAN add:
1 banana (remove one egg) or
1/4 cup sugar free apple sauce (remove one egg)
1/4 cup organic dark chocolate chips.
1/4 cup shredded carrots
1/4 cup figs or dates
